What makes Fredericksburg Coffee Co. different?

We're a small-batch roastery in the Texas Hill Country, and I roast every single batch by hand — by sight, smell, and sound, no computers running the show. Every bean is traceable back to the farm or co-op it came from, and there are never any chemicals or artificial flavorings in what we sell. It's real coffee, roasted fresh, one batch at a time. That's the whole thing.

Is your coffee organic?

Some of it is. Several of our coffees are sourced organic — our Pacavita Honduras, our Sumatra Mandheling, and our Mexico Chiapas decaf, to name a few. But you won't see a "USDA Organic" stamp on our bags, and I want to be straight with you about why. Certification means paying for a label and running a completely separate set of equipment that only ever touches organic beans, and I'm not going to do either. What I will tell you is the truth about every coffee we source: it's all natural, it's organic when I can source it that way, and it's built on trust. If a coffee's organic, I'll say so. If it isn't, I'll tell you that too.

Do you flavor your coffee?

No — no artificial flavorings, ever. If you taste toffee or brown sugar or toasted pecan in one of our coffees, that's the bean and the roast, not something sprayed on. The one exception is our seasonal Tannenbaum holiday blend, and even that's done the honest way: real cinnamon sticks sitting in the coffee, with a fresh stick dropped in every bag. Nothing artificial.

How is your decaf made?

Our decaf is a Mexico Chiapas, and it's Mountain Water Processed — decaffeinated with water, no chemical solvents. It's organic, too. Same standard as everything else we sell: nothing you wouldn't want in your cup.

Are you the coffee shop downtown? Or the pecan-flavored coffee company?

We get this one a lot, and no hard feelings — the names are close. We're not the café downtown, and we're not the flavored-coffee outfit. We're Fredericksburg Coffee Co., a hands-on roastery. No pecan flavoring, no chemicals, just single origins and blends roasted by hand right here in the Hill Country. How fresh is the coffee?

Fresh. I roast in small batches to keep up with orders, so your bag hasn't been sitting on a shelf for months. Coffee's at its best in the first few weeks after roasting, and that's right about when it's landing in your hands.

Do you ship?

Yes — we ship all over the country, roasted fresh and sent from right here in Fredericksburg. Order online anytime.

When will my order ship?

Most orders go out within a couple days. That said, we ask you to allow up to a week, and here's the honest reason: I roast every batch by hand, and sometimes nature has other plans. Three or four days of rain and thunderstorms in a row and I can't run the roaster right — and I'm not going to send you a batch I'm not proud of just to beat a clock. Weather's the one boss I don't get to argue with.

If we're ever taking time off, we put a banner right on the website letting you know that any orders placed after a certain date won't ship until we're back. I'd rather tell you straight, up front, than leave you wondering where your coffee is.

Can I get my coffee ground, or is it whole bean?

Most of our coffee comes your choice — whole bean or ground — right there on the product page. There are two exceptions, and there's a good reason for both.

Our 5 lb bags are whole bean only. Five pounds is a lot of coffee to have sitting around already ground, and it'll go stale long before you reach the bottom of the bag — and stale coffee is the one thing I won't send you. If you're buying five pounds at a time, you're serious about your coffee, and honestly the best money you can spend is on a decent burr grinder. You can find a good one for around $50, and grinding as you go is the jump from good coffee to great coffee.

Our espresso blends are whole bean only, too. Espresso should always be ground fresh, and every espresso machine wants a slightly different grind. Rather than guess at your machine's setting and run the whole batch through to one grind that'll never be quite right for you — and go stale on top of it — we leave espresso whole bean so you can dial it in for your own setup.

Need it ground anyway? If grinding truly isn't an option for you, reach out to me directly, or just leave a note on your order at checkout, and I'll grind it for you. I'd rather do that than have you go without. I just don't make it the default, because the default should always be fresh.

Is there free shipping?

A couple of easy ways to save. Spend $50 and you get 5% off. Spend $100 and shipping's on us. Those numbers line up with our box sizes — $50 fills a 3-bag mailer, $100 fills a 6-bag — so it's a real deal, not a gimmick.

What's Subscribe & Save?

It's the best deal we offer, and it's simple: you build your own box — pick the coffees you want and how often you want them — and you get our best price. Change it or cancel whenever you like after two orders. If you drink our coffee regularly, this is the way to buy it.

Something's wrong with my order — what do you do?

If it's on me, I make it right, full stop. Wrong bag, damaged in shipping, something off with the coffee — reach out and I'll take care of you. I put my name and my cell number on this business on purpose. I'd rather fix a problem and keep you than save a few dollars.

Visiting & Local Pickup

Do you have a storefront I can visit?

We're a roastery, not a café — no walk-in counter, no set hours, and we don't serve cups on site. But if you're local, you're not out of luck. Find us around town by clicking Here. Or read on.

I'm local — can I skip shipping and pick up instead?

You bet, and it's easy. When you order online, just choose local pickup instead of shipping at checkout. I'll set your order in our secure pickup cabinet with your name on it — already paid for, ready to grab — and email you the door code. The cabinet's available 24/7 and it's all on camera, so you can swing by on your own schedule, day or night, weekend included. No working around my hours, and no shipping charge.

While you're there, you'll usually find a few extras on the top shelf — a bag of coffee, a hat, a mug — that you're welcome to add on and pay for with a quick QR scan.

Wholesale, Private Label & Giving Back

I run a shop, restaurant, or B&B — can I serve or sell your coffee?

What are the fundraiser blends?

Our Lovey's Blend and Shooting for the Stars blends benefit Hill Country Animal Rescue — good coffee that does a little good.
